If using fresh cauliflower, cut it into florets and pulse it in a food processor until it resembles grains of rice.
Pat fresh or thawed cauliflower rice dry to remove excess moisture.
Heat the avocado oil in a large skillet over medium heat.
Add the diced onion and cook for three to four minutes, until softened.
Add the minced garlic and cook for approximately 30 seconds.
Add the tomato paste and cook for one minute, stirring continuously.
Stir in the chili powder, cumin, paprika, oregano, salt, black pepper, and optional cayenne.
Cook the spices for approximately 30 seconds, until fragrant.
Add the cauliflower rice and stir until evenly coated.
Pour in the tomato sauce and chicken broth.
Cook uncovered for eight to 10 minutes, stirring occasionally.
Continue cooking until the cauliflower is tender and most of the liquid has evaporated.
Taste and adjust the seasoning.
Remove the skillet from the heat.
Garnish with optional cilantro and serve with lime wedges.
