Wash and dry the zucchini. Use a spiralizer to create zucchini noodles. Gently blot away excess moisture with paper towels.
Pat the shrimp dry and season lightly with salt and black pepper.
Melt the butter in a large skillet over medium-high heat.
Add the shrimp in a single layer. Cook for two to three minutes per side, until pink and opaque. Transfer the shrimp to a plate.
Reduce the heat to medium. Add the garlic and cook for approximately 30 seconds, stirring constantly.
Pour in the heavy cream and stir until warmed.
Add the Parmesan gradually, stirring until the sauce is smooth and creamy.
Add the zucchini noodles and toss gently in the sauce. Cook for two to three minutes, just until slightly tender.
Return the shrimp to the skillet and toss until coated and warmed through.
Remove from the heat. Garnish with parsley, additional Parmesan, red pepper flakes, or lemon juice if desired.
Serve immediately.
