Ingredients
  

  • For the Soup
  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • ½ pound Italian sausage casings removed
  • 1 small onion diced
  • 4 garlic cloves minced
  • 24 ounces marinara sauce with no added sugar
  • 4 cups beef broth
  • 1 tablespoon tomato paste
  • 2 teaspoons Italian seasoning
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon onion powder
  • ½ teaspoon salt or to taste
  • ¼ teaspoon ground black pepper
  • 12 ounces hearts of palm lasagna noodles drained, rinsed, dried, and chopped
  • For the Cheese Topping
  • 8 ounces whole-milk ricotta cheese
  • 4 ounces full-fat cream cheese softened
  • 1 cup shredded mozzarella cheese
  • ½ cup freshly grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Optional Garnishes
  • Fresh basil
  • Extra mozzarella
  • Extra Parmesan
  • Crushed red pepper flakes
  • Chopped parsley

Equipment

  • Dutch oven or large soup pot
  • Wooden spoon or silicone spatula
  • Medium mixing bowl
  • Cheese grater
  • Ladle

Method
 

  1. Heat the olive oil in a Dutch oven over medium heat.
  2. Add the ground beef and Italian sausage.
  3. Cook until browned, breaking the meat apart as it cooks.
  4. Drain excess grease if necessary.
  5. Add the diced onion and cook for three to four minutes.
  6. Add the minced garlic and cook for approximately 30 seconds.
  7. Stir in the marinara, beef broth, tomato paste, Italian seasoning, oregano, basil, onion powder, salt, and black pepper.
  8. Bring the soup to a gentle simmer.
  9. Reduce the heat to medium-low and simmer uncovered for 18 to 20 minutes.
  10. While the soup simmers, combine the ricotta, cream cheese, mozzarella, Parmesan, and parsley in a medium bowl.
  11. Stir until smooth and evenly blended.
  12. Add the hearts of palm noodles to the soup.
  13. Simmer for another three to five minutes, until warmed and tender.
  14. Taste the soup and adjust the seasoning.
  15. Ladle into six bowls.
  16. Top each serving with a spoonful of the ricotta mixture.
  17. Add any optional garnishes and serve warm.

Notes

  • Check Italian sausage and marinara for added sugar.
  • Drain excess grease after browning the meat if necessary.
  • Drain, rinse, and dry hearts of palm noodles before adding them.
  • Zucchini, cabbage, or konjac noodles may be substituted.
  • Add zucchini noodles during the final two minutes to prevent overcooking.
  • Store the soup and ricotta topping separately.
