Ingredients
  

  • 1 cup unsweetened almond milk
  • ½ cup heavy whipping cream
  • 2 tablespoons powdered keto-friendly sweetener or to taste
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional Flavor Additions
  • Sugar-free fruit flavoring
  • Coconut strawberry, raspberry, lemon, or orange extract
  • 1 to 2 tablespoons unsweetened cocoa powder
  • ⅓ to ½ cup berries blended
  • 1 tablespoon lemon or lime juice

  • Six-cavity popsicle mold
  • Popsicle sticks

Method
 

  1. Add the almond milk, heavy cream, powdered sweetener, vanilla extract, and salt to a blender.
  2. Blend for 20 to 30 seconds, until smooth and fully combined.
  3. Taste the mixture and adjust the sweetness as needed.
  4. Add any optional flavoring and blend again briefly.
  5. Divide the mixture evenly between six popsicle molds, leaving a small amount of space at the top.
  6. Insert the popsicle sticks and secure the mold cover.
  7. Freeze for at least six hours or overnight, until completely firm.
  8. Run warm water over the outside of the mold for five to ten seconds.
  9. Gently remove the ice pops and serve immediately.

Notes

  • Powdered sweetener dissolves more easily than granulated sweetener.
  • Allulose may create a softer texture than erythritol-based blends.
  • Fruit and flavored additions will change the nutrition estimate.
  • Full-fat canned coconut milk can replace the almond milk and cream for a dairy-free version.
  • Do not fill the molds completely to the top.
  • Freeze the pops until fully firm before removing them.
  • Nutrition is calculated for the basic vanilla recipe only.
