Ingredients
  

  • 2 large low-carb tortillas
  • cups cooked shredded chicken
  • 2 ounces cream cheese softened
  • 1 teaspoon taco seasoning
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • cups shredded cheddar Monterey Jack, or Mexican-style cheese, divided
  • 1 teaspoon butter or avocado oil
  • Optional for Serving
  • Sour cream
  • Guacamole
  • Salsa
  • Pico de gallo
  • Sliced avocado
  • Chopped cilantro
  • Jalapeños

  • Mixing bowl

Method
 

  1. Add the shredded chicken, softened cream cheese, taco seasoning, garlic powder, and onion powder to a medium bowl.
  2. Mix until the chicken is evenly coated.
  3. Heat a large skillet over medium heat.
  4. Add the butter or avocado oil and coat the bottom of the skillet.
  5. Place one tortilla in the skillet.
  6. Sprinkle half of the shredded cheese evenly over the tortilla.
  7. Spread the chicken mixture over the cheese, leaving a small border around the edge.
  8. Sprinkle the remaining cheese over the chicken.
  9. Place the second tortilla on top.
  10. Cook for three to four minutes, until the bottom tortilla is golden and the cheese begins melting.
  11. Carefully flip the quesadilla with a large spatula.
  12. Cook for another three to four minutes, until the second side is golden and the filling is hot.
  13. Transfer the quesadilla to a cutting board.
  14. Let it rest for one to two minutes.
  15. Slice into wedges and serve warm.
