Ingredients
  

  • For the Fried Rice
  • 4 cups cauliflower rice
  • 2 tablespoons avocado oil divided
  • 2 large eggs lightly beaten
  • ½ cup diced onion
  • ½ cup finely chopped green beans
  • ¼ cup diced carrots optional
  • 2 cloves garlic minced
  • 2 green onions thinly sliced
  • Salt and black pepper to taste
  • For the Sauce
  • 3 tablespoons coconut aminos
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon unseasoned rice vinegar
  • ½ teaspoon garlic powder
  • ½ teaspoon ground ginger
  • Optional Protein
  • 1½ to 2 cups cooked chicken steak, pork, or tofu
  • Or 1 pound cooked shrimp

Equipment

Method
 

  1. In a small bowl, whisk together the coconut aminos, sesame oil, rice vinegar, garlic powder, and ground ginger. Set aside.
  2. Heat one tablespoon of avocado oil in a large skillet or wok over medium-high heat.
  3. Add the beaten eggs and scramble just until cooked. Transfer the eggs to a clean plate.
  4. Add the remaining tablespoon of avocado oil to the skillet.
  5. Add the onion, green beans, and optional carrots. Cook for three to four minutes, stirring frequently.
  6. Add the minced garlic and cook for approximately 30 seconds.
  7. Add the cauliflower rice. Cook for five to seven minutes, stirring occasionally, until tender but not mushy.
  8. Pour the sauce over the cauliflower and stir until evenly coated.
  9. Cook for another one to two minutes.
  10. Return the eggs to the skillet. Add the green onions and any cooked protein being used.
  11. Toss until combined and heated through.
  12. Taste and season with salt and black pepper as needed. Serve immediately.

Notes

  • Fresh or frozen cauliflower rice may be used.
  • Remove excess moisture to prevent a soggy texture.
  • Avoid overcrowding the skillet.
  • Use certified gluten-free coconut aminos or tamari when necessary.
  • Carrots may be reduced or omitted for fewer carbohydrates.
  • Nutrition does not include optional protein.
