Ingredients
  

  • 8 large eggs
  • 1/2 cup full-fat cottage cheese
  • 1/2 cup shredded cheddar cheese
  • 1/3 cup cooked bacon chopped
  • 1/4 cup finely diced red bell pepper
  • 2 tablespoons sliced green onion
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • Avocado oil spray or cooking spray as needed

Method
 

  1. Cook the bacon until crisp, then chop it into small pieces.
  2. Finely dice the bell pepper and slice the green onion.
  3. Add the eggs, cottage cheese, garlic powder, onion powder, salt, and black pepper to a blender.
  4. Blend for approximately 15 to 20 seconds, or until completely smooth.
  5. Lightly grease silicone egg bite molds.
  6. Divide the chopped bacon, red pepper, green onion, and shredded cheddar evenly between the molds.
  7. Pour the blended egg mixture into each cavity, filling approximately three-quarters full.
  8. Preheat the air fryer to 300°F if required by your model.
  9. Carefully place the silicone mold into the air fryer basket.
  10. Air fry for approximately 10 to 13 minutes, or until the centers are set.
  11. Remove the mold carefully and let the egg bites rest for approximately 3 to 5 minutes.
  12. Gently remove each egg bite from the silicone mold.
