Ingredients
  

  • For the Taco Meat
  • 1 tablespoon avocado oil or olive oil
  • 1 pound ground beef
  • ½ small onion finely diced
  • 2 cloves garlic minced
  • 1 tablespoon chili powder
  • teaspoons ground cumin
  • 1 teaspoon smoked or regular paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • ½ teaspoon salt or to taste
  • ¼ teaspoon ground black pepper
  • ¼ cup water
  • 1 tablespoon tomato paste
  • 1 teaspoon fresh lime juice optional
  • For the Cheese Shells
  • 2 cups freshly shredded cheddar cheese or Mexican cheese blend
  • Optional Toppings
  • Shredded lettuce
  • Diced tomatoes
  • Shredded cheese
  • Sour cream
  • Sliced avocado
  • Guacamole
  • Chopped cilantro
  • Sliced jalapeños
  • Diced red onion
  • Lime wedges

Equipment

  • Large skillet
  • Wooden spoon or meat chopper
  • Rimmed baking sheet
  • Parchment paper or silicone baking mat
  • Box grater

Method
 

  1. Preheat the oven to 375°F.
  2. Line a large baking sheet with parchment paper or a silicone baking mat.
  3. Heat the oil in a large skillet over medium heat.
  4. Add the ground beef and diced onion.
  5. Cook for six to eight minutes, breaking the meat into small crumbles.
  6. Drain excess grease if necessary.
  7. Add the minced garlic and cook for approximately 30 seconds.
  8. Add the chili powder, cumin, paprika, garlic powder, onion powder, oregano, salt, and black pepper.
  9. Stir until the meat is evenly coated.
  10. Add the water and tomato paste.
  11. Reduce the heat to medium-low and simmer for three to five minutes, until the filling is moist but not watery.
  12. Stir in the optional lime juice.
  13. Taste and adjust the seasoning.
  14. Divide the shredded cheese into eight approximately ¼-cup piles on the prepared baking sheet.
  15. Spread each pile into a thin four- to five-inch circle.
  16. Bake for six to nine minutes, until melted and golden around the edges.
  17. Let the cheese circles cool for 30 to 60 seconds.
  18. Carefully lift each circle and drape it over a wooden spoon handle, baking-dish edge, or taco holder.
  19. Let the shells cool completely.
  20. Divide the taco meat among the eight shells.
  21. Add your preferred toppings.
  22. Serve immediately.

Notes

  • Use freshly shredded low-moisture cheese for crispier shells.
  • Bake the cheese until the edges are golden.
  • Do not fill the shells until immediately before serving.
  • Simmer the meat until excess liquid has evaporated.
  • Check tomato paste, seasonings, salsa, and packaged toppings for added sugar.
