Crispy keto zucchini fries coated with almond flour, Parmesan, garlic, and Italian seasoning. Make them in the air fryer or oven for an easy low-carb snack or side dish.

Ingredients
  

  • 2 medium zucchini
  • 1 large egg
  • ½ cup finely grated Parmesan cheese
  • cup blanched almond flour
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt or less to taste
  • Cooking spray

Method
 

Air-Fryer Instructions
  1. Preheat the air fryer to 400°F.
  2. Trim the ends from the zucchini. Cut each zucchini into evenly sized fry-shaped pieces.
  3. Pat the zucchini thoroughly dry with paper towels.
  4. Add the egg to a shallow bowl and beat until smooth.
  5. In a second shallow bowl, combine the Parmesan, almond flour, Italian seasoning, garlic powder, pepper, and salt.
  6. Dip each zucchini piece into the egg. Allow the excess egg to drip back into the bowl.
  7. Press each piece into the Parmesan mixture until coated on all sides.
  8. Arrange the zucchini fries in one layer in the air-fryer basket. Leave space between the pieces and cook in batches when necessary.
  9. Spray the fries lightly with cooking spray.
  10. Air fry for 9 to 12 minutes, turning carefully halfway through, until the coating is golden and the zucchini is tender.
  11. Serve immediately with your preferred keto-friendly dipping sauce.
  12. Oven Instructions
  13. Preheat the oven to 425°F. Line a large baking sheet with parchment paper or place a lightly greased wire rack over the baking sheet.
  14. Prepare and bread the zucchini using the instructions above.
  15. Arrange the fries in one layer, leaving space between each piece.
  16. Spray the tops lightly with cooking spray.
  17. Bake for approximately 18 to 22 minutes, turning carefully halfway through, until golden and tender.
  18. Broil for one to two minutes at the end for additional browning, watching closely to prevent burning.

Notes

  • Small or medium zucchini usually produce a better texture than oversized zucchini.
  • Dry the zucchini thoroughly before breading.
  • Cooking time may vary depending on the thickness of the fries and the air-fryer model.
  • Cook in batches rather than overcrowding the basket.
